I was digging out rubble in a tomb and it came up with some message that I had dug so much rubble it had improved my skill (forget how it was phrased).  I wonder if this could be another hidden skill?

It's not a hidden skill--in the Adventure Journal, there are "adventuring" challenges, like Explore X Dive Wells and be able to explore dive wells at a faster rate, or the one you mentioned about rubble piles.

To answer a few questions:
Toddler skills using books are color coded, writing, logic, and painting. If left lying around, toddlers can read them on their own.Children Teens and Parents can read to Toddlers and reading to them in the library gives an added relationship/environment boost. The Jimmy Sprocket series is not part of the skill sets.

As for keeping track of skill levels, especially for adults, most of the hidden skills get those yellow announcements every 3 levels or so. That said, you'll see at least 2 announcements on hidden skill progress. I've seen it for diving, haven't seen it yet for dancing.

The blocks set for toddlers boosts logic. The child's block TABLE boosts handiness for children, not toddlers, but the table does provide social interaction between toddlers who have learned how to talk. The xylophone boosts music, the stuffed animals once boosted charisma in sims 2, but as far as sims 3, I'm not sure.

How do you know what skill level you are in these?  And does anyone know, what is the point of them being hidden?  I like the other skills where I can see where I'm at and can work on them.  Just wondering what your thoughts are on this.  thx.

Typically each Hidden Skill Level unlocks new abilities or improves something or other.  :)

They are hidden because they simply aren't expanded enough to make them regular unhidden skills. They have no Challenges past level 10 and they often don't go to level 10 in the first place.
