How to continue after achieving the new beginnings?

If I pick a new ambition, the option for my kingdom goes away and it only will allow me to start a new kingdom. What am I missing?

Once you've finished an ambition, that kingdom is done.  You move forward to the next ambitions and build new kingdoms.

Wish I would have known I only got one shot at my first kingdom, I wouldn't have rushed through it so fast :(
So I can't level up any of the characters now?

There is a way to continue playing your old kingdom in a new ambition.  Gamespot's Sims Medieval forum has a post about this very topic, and I can speak from experience and tell you that it works.  Here's the link to the instructions, which involves a little bit of knowledge of where your game files are, and how to make folders (to save a game).  It's pretty easy to follow, though.

Don't forget about Brave New World quest.  After an ambition is complete, you can choose one of your heroes to jumpstart your next kingdom.  They will have the abilities of their job level, and have their level translated into Monarch level.  But huge tip, save your game.  If you want to keep the hero that you've sent off, 'save as' when you save after the end of the quest.  Also when you jumpstart the kingdom with your hero, immediately save the game.  I've lost 2 level 10 blacksmith/monarchs due to deciding that I wanted a different style or different 2nd hero.  General rule, save after every quest you finish.  *headdesk*
