Finding things that aren't yet lost is my favorite off-beat way to make money in the game.  My kleptos have lucrative careers in "automotive re-appropriation."

My favorite off-beat way to make money is to play the consignment store.  I go in and buy up all the crafted items and non-skill related books that are being offered and then put them all up for consignment.  You can pretty much double your money every time you do this and it has the advantage of causing new items to come up for sale frequently.  It is a great way to get a camera or a cheap set of sim-life goggles to appear.  The down side is that you need to have money to invest.

Another great ways to make money fast is breaking space rock blocks for gems - HUGE money to be made that way.  Mining is another good way to make money.  It's probably my least favorite of the ones I have mentioned because the noisy miner wreaks havoc with your relationship with other sims.

I like to move in rich people with their lovely cars, then move them out via Kick Out. Although they always leave without the Vehicle they had arrived in.

I've chosen the option "gold digger". Though I was leaning towards kleptomania I realized I didn't make(have) kleptomaniac sims in a while.

I like the combo of a Private Investigator and Kleptomania trait. It let's get 6 items a day. Steal 3 items a night and Take for Evidence 3 items a day.

I also have never tried fishing to make money. I only did it to make food. Live and learn!

With pets my new way of making money is having my dogs hunt. I was surprised how much they can bring in from the gems and metal they bring home. Just running 2 dogs and my sim not making any money he had his Lifetime wish of Living in the Lap of Luxury in about a sim week.

I have to say the way I had a lot of fun in a game was marriage.  Marry a Sim, get the gifts and then kick him out. Then on to the next sucker, oops...husband. My faithless Sim became quite wealthy.

Breaking space rock boards without a doubt.  I regularly get Tiberium from this method, get it cut into heart shape and place it on the lawn.  In a few days it turns into a spire cut and grows into a large spire cut at 35k+ simoleons each for an outlay of 1k.  I score a lot of gems especially the high value ones like soulpeace, pink diamonds and opals.  Beats the heck out of scouring the landscape for gems and finding mostly low value gems.  I use Warfreak's guide and sell everything below the average and keep and cut the rest.  I do display some of it because it boosts the decorated moodlet, the rest just goes in WA treasure chests or is used in transfiguration.

I've always had great luck in swiping what I want from Sims. My Sim almost always get what (s)he wants to grab.
