It's suggested to keep a backup copy of the saves, just in case they are able to actually fix the game to where you can then load the "bad" save.

I either move the whole Sims 4 folder out to the desktop or rename it something like Sims4Old. That's the easiest way for me to save a back up of my Sims 4 files.

Hopefully if you've tried a new save it's going well?

Thank you so much MrsFlynn!! For all your help, really you've been so awesome! Great news! The patch they put out today fixed my saves! They all open again! I was a good girl this time and made copies of my saves and tray files (whatever those are lol) and removed the entire mods folder for the patch. When I started things back up it was all running again!! Yay!! ;D ;D

I'm happy to hear the patch worked for you. I was hoping it would and for the others that came across the issue.

The files that are in your Tray folder are your Sim families and Houses and Community lots that you've created or saved to your library.
