Getting Spells for Witches.

How do you train a witch? I can conjure poisoned apples and play with magic. Is there any other way to get spells? She can't cast spells, only do those two interactions.

As you gain levels of magic skill you will be able to cast spells...just keep conuring apples and playing with magic and before long you will be able to do other stuff.

Is there any way/anywhere to check at which level the witch is?

No, it's a hidden skill. But you can generally tell by what they are able to do. There is a table in the witch guide that shows you what each level brings.

My witch seems impossible to level.  It seems like it took less than a week for my fairy to hit level 10, but it's the end of week 4 and my witch is still only stuck at level 6 (being able to do the bladder/hunger/hygiene curses).  I want him to be able to clean the house!  He's been using the bladder/hunger/hygiene charms any time any of those motives falls even slightly, and still nothing.  Any tips?

What I've been doing is actually doing a whole metric ton of Conversion Rituals (I'm trying to get Toads in Sunset Valley, and no luck really). I believe I'm at 6 or 7 at the end of the first week. What exactly are you doing other than charming yourself?

There is a mod called "Hidden Skills Unhidden" over at MTS which displays progress for hidden skills. It was recently updated for Supernatural and I haven't had any problems using it yet. Very handy to see how well you're progressing in Spellcasting, along with other hidden skills (like dancing/karaoke/etc). Just google and you should be able to find it if you want to give it a try. 8)

I did conjuring apples and then conversion rituals on them for weeks and I still only got to 7.  Finally after doing a whole ton of charming, I got to 8 with the sunlight charm, but it still took forever and I'm at the end of week 5 now.

It just takes a while.  If I remember right from the guide, playing with magic raises experience faster and doesn't drain the magic bar in the process.
It takes forever that way to, it does drain the magic bar a little, but my Sim has the best wand. The spell that drains the most magic is magically upgrading stuff, as it drains the magic bar the entire time your using the spell.

She researched at her house, but she does know how to make elixirs.

Elixers actually have nothing to do with magic as any sim can learn alchemy.

Have you got a familiar for your witch. If helps in gaining skill levels faster.
I didn't know about familiars until I read the guide here so I got a cat and I can tell the difference.
