Wont the resolution make me not be able to see it on the screen?
Depends on your own screen resolution, give it a try. Remember to test screenshots too, for some reason the second highest res for me looks fine in game but comes out looking super weird in screenshots. What about the graphics?
Not to sound like a complete idiot. What exactly is a FPS,what happens if they are too high, what is considered too high, and where do I find out how high mine are.

Don't worry, I only found out a while ago! It means Frame Per Second, and I'm probably going to be horrid at describing it. Erm.. basically, a laggy game would have a very low and stuttering fps (although some games with super high FPS's may stutter the game as well). It's like, the frame rate per second.. Erm.. The way the game goes.. How fast it moves, if you get what I mean? *sigh* I give up, I know what it is but I can't describe it.
Someone else will come along and do a better job. As for the other questions, I think the optimum FPS is usually about 20-30, higher than that isn't too bad unless it's going at a number like 90 and even worse is Warr's massive 180!! If it goes too high, it can potentially damage your card - that's a whole lot of pressure being put on it. To find out your fps in game, open up the cheat console and just type in "fps on". A little white number comes up in the right hand corner. That's your fps. It changes, it goes up and down, but you'll be able to tell which number you see the most.
Mine is 12 which isn't too great but I'm hardly experiencing lag so I'm not worrying at the moment.
