Can you turn off celebrity stars? They are really irritating.

That is not yet possible, and there is no estimated time of when a patch will come with an option to disable Celebrities.

Welcome to our Forum, crazygal.

Once your Sim is a celebrity, he will remain one and also increase the celebrity status.  I'm unaware of any plans to change this.
