Eh, I haven't looked at any of her other recipes, but it appears that this is a weight management type website. I have some experience with the whole trying to lose weight thing, and I've seen quite a few recipes for baked goods that try to sneak some cottage cheese in. It has a fairly nuetral flavor, low calories, and good protein content to help with satiety. Of course, it does alter the texture of whatever you're putting it in, and not always for the better.
I bet a non-diety type of website might have a more "tradtional" version of lime pancakes.
