Hypothetical Question about EP's

Would it be possible to play Vanilla once an EP is installed? Because I have my first Vanilla family I would like to start playing again, but don't want new features, like inventing, etc.

Once you have installed expansion packs, the content is always available in every game unless you uninstall it.  You could choose to not have them invent but the option would be there regardless.

Ambitions is pretty unoticable unless you try to get is features, but Generations and Late Nights features are pretty unavoidable.

You can still play vanilla in that all of the vanilla content will still be available after an expansion pack is installed.  But you will also have all of the content of the expansion pack(s) available.  Some things you can remove, such as the fire department, which you can just delete.  But things like collectibles and plants for gardening that come with an expansion pack will always be there.
