And if you have a Death Flower in your inventory you can avoid an accidental death. The Grim Reaper will take the flower instead of you.

The only problem with aging off is that the kids don't age. My sims would go nuts if their kid was a toddler forever! So, I let the kid become a child, ship them off to boarding school and turn off aging again until they discover the "young again" potion. Then I turn aging on and let them be forever young.
