Crashhat, I think the only way to know is to try and see.  Some people like to play with just one or two sims, others prefer playing with more.  It's definitely a different sort of game when you're focusing on raising children as opposed to just a single sim.  A multi-generational household like a legacy or an Immortal Dynasty can be very challenging but very rewarding, and that sort of gameplay is quite popular.  I think it depends on what you like to do in the game.  I started out playing single sims but doing challenges got me into playing larger households, and now I enjoy both types of household.

I run the spectrum  from 1 to 8 depending on what I'm doing.  If I have the LTW wish of gold digger or master romancer I usually have just one or two Sims. I've had households full of young adults with diverse traits just to see what happens.  If I really want to concentrate on skill(s) building for a specific purpose I usually have just one.

On the ps2 versions of the sims I always played with one sim and it was fun.

On PS3, I started out with 2 sims, but found that I was fast-forwarding a lot rather than actually playing.
When one Sim was at work and the other was reading, writing, painting, etc, all I could do was speed it up until one of them was free.

Now, I play 6 most of the time and rarely get bored or have to fast forward (somebody always needs something, heh).

On the flip-side. My buddy plays 2 (or 3 at most) and loves it. It really all depends on the player. I'm an "achiever" while he is an "explorer". We each get our jollies on our own way.
