Moonlighting as a Mixologist

Is moonlighting as a mixologist really a profitable career? In my experience I have not made much money at all even if I have gone to the hotspot. Has anyone had any different experiences or tips for moonlighting?

No, I haven't had it be very profitable.  If you're looking to just serve a large number of people, I've noticed that, in my games, Eugi's Watering Hole in BP is always busy, even when it's supposed to not be.

The dive bars are busy, but the drinks are so cheap there is not much profit to make.  If your skill and drink list is good enough, you can tend at a classy place.  These are usually almost empty, even if it is supposed to be a "hotspot".  The few drifters who do show up sometimes never make it to the bar to ask for a drink.  I tried to invite over a few famous sims before.  One out of 5 will actually stay and order a drink, so I can give them the one I made specifically for them or one made with homegrown flame/life fruit.  You do get famous pretty fast, but with the actual bartending I really have not had much luck so far.

Moonlighting won't ever make enough to make a living or get rich.  It's just something to do that's different.
