How to start LN jobs in Sunset Valley?

Hi, this is my first topic. I don't like Bridgeport, but I want to have some nightclubs and watering holes in SV. I created some sims to have some Bouncers, mixologists and musicians. But then I saw, that bars recruited their own bouncers and mixologists.

-What do I have to do to be a Bouncer in club?
-How high must be my mixing skill to gain oportunity to be a Mixologist in a club?

I'm new to LN and I didn't learn anythign useful from in-game lessons, so please enlight me

As far as I know, you cannot bounce at the clubs. There is an opportunity to bounce at the theater based on athletics. But, that is a rabbit hole job.

To moonlight as a bar tender, you just go to the club and click on the current mixologist. The option appears to moonlight. I don't if there is a level restriction or not. My mixologist was level six before he even tried.

The moonlight option comes up at level 2/3 in the mixology skill. At the lower levels you can only moonlight in dive bars, as your skill increases you can moonlight at more high end establishments.

You can't play a Bouncer.  It's strictly a Non-Playable Character (NPC).
