I've always played with aging off because after modifying every aspect of them in CAS and working hard to level their skills, it feels depressing for them to just die.
Sorry to be the necro but: this!
I feel like I dont play this game so much as redesign it to my tastes- I spent hours in CAS working on the all the details of cheek, jaw, nose, of my sims and then usually I carry these chars from town to town, creating new stories for them- and they then try out each new expansion/features in whatever EP Im in.
Im pretty sure my time spent in build mode is equal to or more than my actual playing time lol

I'm pretty stuck in the mindset of playing with a normal lifespan. I used to play on long, but I like seeing my sims grow up and grow old and even the long setting is too long for me nowadays.

My primary Sims, Adam and Lisa, are immortal young adults. I designed both of them, and they are there as my favourites to experience the game. Everything else is a distraction or an addition, and ultimately they might be serious about raising a family. I figure they are about 100 to 150 days old right now. I'm not very fast.

I made only them immortal though. When I have a child or teen, I stretch it out to about 20-30 days, because that is their purpose to me. To experience a different life state, so no need to rush. I have no interest in more adults. This allows me to keep story progression going, I enjoy the slow dynamics of it. Besides, I'd never get my reaper snowmen if nothing ever died on my property (I have a ghost cat that likes to visit me at night now, but without the obligation of feeding it so it's pretty awesome).

Custom lifespan of 140 Sim days

Baby - 2
Toddler - 7
Child -  20
Teen - 30
YA - 35
Adult - 35
Elder -11

I came up with this because I find that normal is too short but long is much more time than I need.

I like to play my non challenge games as:

Baby - 2
Toddler - 5
Child - 7
Teen - 10
Young Adult - 26
Adult - 25
Elder - 15

It still totals the normal life span of 90 days.

I usually don't bother with the lifespan setting. If I want my sims to live longer for whatever reason, I either use one of the potion LTRs, ambrosia, or make them a fairy.

I originally started with aging off and played until I got bored trying to do everything under the sun. Now I play a normal life span and just keep my sim young with potions/ambrosia and watch the world move on without her. Beyond playing a dynasty it breaks my heart to see them die, so I try not to let them go.

I've actually just started this challenge for myself. Created a sim to try to do everything there is. Reach top of all careers, max (and maybe supermax) all skills, get level 3 visa in all destinations, and even have a legacy, but hang around to see the end of it. Let's see how long until I get bored.
The outside is quiet, but the inside is on full blast.

I usually play on a Long lifespan but I also usually end up with vampires so that was self sabotage when I got bored - they've maxxed skills, got all their job promotions, and for my first vampire, I gave her immortality so she's never going to die so I let her start a family and changed the settings back to Normal.

With my witches, I put them on Long lifespans again and my first witch was at the end of her Elder stage and had grandkids and a tragic early adulthood so my mom convinced me to use a Young Again potion so she could do over. It's pretty funny to see a Young Adult getting a pension.

Currently, for one of my human families, I'm using a Normal lifespan and I'm so sad! They die so quickly and it's like they can't just have fun - but I'm planning to change the lifespan back to a modified Long after I reach a certain point. It's within sight so I'm almost done!!
