Okay, I haven't done the minors yet, but here are the additional major options I came up with (because I'm obsessed with both the Sims and education and have too much free time):

Agriculture -- Max gardening and riding. Befriend 10 large pets and grow eggs, cheese, burger patties, and steak. Choose either The Jockey or The Perfect Garden for lifetime wish.
Alien Studies -- Max logic and handiness. Be abducted by aliens. Befriend an alien. Upgrade a spacecraft. Optional: Raise an alien baby. Choose The Tinkerer for lifetime wish.
Asian Studies -- Max martial arts. Optional: learn charisma. Read 10 books from China. Obtain a level 3 VISA in China. Make 10 friends from China. Choose from Martial Arts Master, Seasoned Traveller, or Great Explorer for lifetime wish.
Business -- Max charisma and logic. Do an 'internship' in the business career (join the Business career at level 1). Befriend your boss and co-workers.
Child Development -- Max logic. Potty train 5 toddlers. Teach a toddler skill to 5 toddlers. Tutor students for 20 hours.
Computer Programming -- Max logic and handiness. Hack for 30 hours. Do 10 upgrades on computers. *Must have Computer Whiz trait to hack.* Choose The Tinkerer for lifetime wish.
Criminology -- Max athletic, logic, and painting. Choose International Super Spy or Forensic Specialist: Dynamic DNA Profiler for lifetime wish.
Egyptian Studies -- These skills are optional: photography and charisma. Read 10 books from Egypt. Obtain level 3 VISA in Egypt. Make 10 Egyptian friends. Explore 6 tombs in Egypt. Choose Seasoned Traveller or Great Explorer for lifetime wish.
English -- SuperMax writing, and read 30 books. Choose Professional Author.
Fine Arts -- Choose three skills to max from: painting, photography, writing, sculpting, any instrument. Choose from Illustrious Author, Master of the Arts, Visionary, or Renaissance Sim for lifetime wish.
Foreign Studies -- Charisma is optional. Read 3 books from each location (France, Egypt, China). Obtain at least level 1 VISA in each country. Invite home at least 1 foreign friend from each location. Choose Seasoned Traveller or Leader of the Free World for lifetime wish. (Leader of the Free World is not actually related aside from charisma, I just like the idea of foreign relations being a prerequisite for entering politics.)
French Studies -- Max nectar making. Charisma is optional. Read 10 books from France. Obtain level 3 VISA in France. Make 10 friends in France.
History -- Max writing. Read 30 books. Explore six tombs. Choose Great Explorer or Professional Author as lifetime wish.
Political Science -- Max charisma and writing. Do an internship in political career. Make 10 friends.
Supernatural Studies -- Max alchemy. Make best friends with at least 1 Sim from each Supernatural type. Research the Supernatural at the Vault of Antiquity 15 times. Enter 5 Trivia contests.
Theatre Arts (My own major, couldn't resist!) -- Max charisma, writing, and one instrument.

I also made the following changes to existing majors: I offered Visionary as an option for the Art major (for some reason, Sculpting doesn't register as power wishes when I do Renaissance Sim anyway), for the Athletics major I offered the option of either maxing cooking (nutrition) or training Sims on exercise machines for 30 hours, for Music I made the lifetime wish One Sim Band, I added discover 25 celestial bodies to the Physical Sciences major, and I added an internship to the Restaurant Management major.

I think all the majors I made up or modified would probably be harder, so I don't know if they really line up. I haven't actually played this yet.

I like your majors. I haven't played this all the way through, either. I guess I have a hard time playing a full house unless it's for a challenge.

Thank you, I had fun making them up. I've been working on minors to complement the majors for University now, as well as building a university to go with these majors here.

It's high time there was a University option for Sims 3.  I do worry my Sims 3 sims are barely educated. 

How about:
Archaeology:  [Max athletic, explore 6 tombs,] Complete all the relic collections.  (This will obviously involve exploring a lot of tombs, and athletic skill is likely to get well developed in doing so.)  Great Explorer or Seasoned Traveller.

Oooh, I like it. It's funny that I'm building an Archaeology section of the university and didn't even think of the corresponding major. May I propose Private Museum as an alternative LTW? Then they will get lots of relics-related wishes.

I want to make an Anthropology major (I am fond of anthropology in real life) but I don't know what the requirements would be.

I started a College Daze before University came out and now it's kind of on the back burner while I get my University obsession taken care of, ha ha. Anyway, I love the idea of Archaeology (and Pluto's suggestion!) and I really would love to see some sort of Anthropology and its many branches in this game in the future.

I love this challenge and I will play it again sometime.
