Yes, that happens most likely because the food isn't supposed to be replicated in bad quality.
There is a certain amount of time it take a dish to go from perfect, or any other quality it was made in to spoiled. Apparently the food replicator recet that time for a few seconds, but when you finally replicate the food it will go back to bad in just a matter of seconds.
It had happend to me too. That's why I only make a 'record' of the food directly after making the dish. And I copy only the 8 dish-dish so I can store the rest in the refrigurator once done.
Of course, Ambrosia can't be stored as a 8 person dish, but that's obviously, as it isn't made like that either.
