By default screenshots should save to the folder path below:
C:\Users\Username\Documents\Electronic Arts\The Sims 4\Screenshots
See photo in post below for what the path looks like in-game - Go to Options > Game Options > Screen Capture tab.
Here are a few troubleshooting tips to try:
1. Create a new save and take some screenshots. (for testing purposes.) Minimize the game, and check the screenshots folder.
2. If they are not there, try repairing the game (In Origin, click on Sims 4 and select Repair.) and try testing again.
3. If they still aren't there, search your computer for Sims 4 to see if the files are being saved some where else.
To search your computer, click the Start button. In the Search bar type in the Sims 4. If you find the folder or files any where other than \Documents\Electronic Arts\The Sims 4\Screenshots. You will want to move or copy them back to that location so the game can recognize the files within that folder.
If they are being saved to OneDrive you will want to turn off or disable it if you haven't yet. As it does interfere with Sims 4, by making it not work correctly.
